porcupines with bite


The following is a recipe that i make for my children [ and husband ]


500 grams beef mince

2 eggs lightly beaten

1/2 cup breadcrumbs

1/2 cup cooked brown rice

2 tablespoons tomato puree

1/2 teaspoon tabasco or sweet chilli sauce


flour for cooking


Place all the ingredients into a large bowl in no particular order and mix.

The best utensil to mix these with is your hand, so get all your rings off [ to avoid mince deposits in stones ] and start mixing untill all combined.

if the mixture seems too gooey then add some more breadcrumbs.

the mixture needs to be together enough to roll

place into fridge covered for 30 minutes

next have a very hot frypan with enough oil to shallow fry. get this hot.

then start to roll little balls with the mince, no bigger than a golf ball, then lightly coat in the flour before cooking in the oil untill browned and crisp.

serve with sweet chilli sauce.
